Method
Make the bibimbap sauce by stirring together the gochujang, water, sugar, salt, sesame oil, chopped garlic and ginger until smooth. Set aside.
Combine the soy sauce, sesame oil, rice vinegar, brown sugar, ginger, garlic and gochujang for the beef.
Brown the ground beef in a large frying pan over medium-high heat, breaking it into small pieces. Drain any excess fat, add the beef sauce and cook until glossy and reduced.
Prepare the rice and toppings. Fry the eggs, slice the spring onions and cucumber, and cook the spinach if using.
Divide the rice between four bowls. Arrange the beef and toppings over the rice, add a fried egg and serve with the bibimbap sauce. Mix everything together before eating.
